Rogue Meats: Travis Ellis’s Quality Cuts

Travis Ellis knows meat. A seasoned bow hunter with some impressive trophies, he got his start in the butcher business by working in and managing chain store meat shops. Feeling unsatisfied with the lack of consistency, he combined his lifetime of hunting knowledge and experience in the business, and built his own custom butcher shop from the ground up.

After more than 10 years in business as Rogue Meats (an addition to Rainey’s Corner Market in Sams Valley), he’s garnered a loyal following of hunters, farmers, and ranchers alike, who have spread word-of-mouth valley wide about the unrivaled quality of cuts and services that they have come to expect and appreciate from Ellis.

The fall and early winter months mark his busiest time of year, with hunting season in full swing. One of the prized pieces of equipment in his business is a state-of-the-art smoker, in which he smokes tasty, secretly seasoned varieties of everything from wild game salami, pepperoni and jerky to pork chops and ham over hickory wood chips.

The full-service butcher shop offers everything; including skinning, processing, cuts, wraps, and smoking. For farmers and ranchers, they also offer kill truck services that will come to your land and butcher the animals for you, before bringing them back to the shop to process. They process all wild game and market animals — just no poultry or fish.

Some of the quality items Ellis makes on-site and sells are sausages: Italian links  and bratwurst, to name just a few. He is always experimenting with new and uncommon recipes and cuts, including Shinkenspeck, which is basically a cut of bacon that is processed in with a cut of ham; the end product resembling prosciutto. Its literal translation from German is “ham bacon.” He also sells hamburger made from whole muscle ground chuck, and steak cuts.
