Caldera Brewing Company is an internationally award-winning microbrewery in its 23nd year of brewing. We are still dedicated to producing uncompromised quality ales, lagers, sodas, such as root beer and ginger ale, and a cuisine that reflects the Pacific Northwest. In addition to the regular menu featuring creative fresh salads, seafood, meats, and poultry entrees, and burgers and sandwiches, guests can also opt for the daily Food and Beer Pairing. The executive chef recently crafted a Buffalo Chicken Burger with Gorgonzola cheese, shredded hearts of Romaine, and Buffalo sauce on a toasted house-made Pub Bun. Served with fries and a glass of Lawnmower Lager. With a constant eye on sustainability, the chef team utilizes local ingredients and farm products, such as Rogue Creamery.

In 2006, Caldera became the first craft brewery on the West Coast to brew and can its own beer, helping to start a revolution. Today they continue to incorporate “green” practices in their business model with reduce-reuse-recycle across all restaurant, brewery and building operations. Their Caldera Soda Works launched with the lowest-sugar root beer on the market, and now includes ginger ale (with organic ginger),  lemon-lime Soda Hop and a refreshing Hibiscus Rose Petal Ice Tea.

Today, the restaurant boasts more than 40 brews on tap, six of Caldera’s most popular beers are available in cans year round. Each season the brewmaster crafts a beer that speaks of what is fresh in the market.  Lining the soaring walls is Oregon’s largest beer display, a private collection of more than 5,000 bottles and cans that owner Jim Mills has amassed since his youth.

Aqua Restaurant and Bar is Ashland’s newest establishment serving farm-to-table American food. Aqua is where locals hangout and travelers make their trip more “foodie” and enjoyable. Owners Parv and Inder Dosanjh refashioned a prior brewpub space into a casual, modern eatery adjacent to their sister restaurant, Taj Indian Cuisine.

Diners with special dietary needs will find plenty to choose from. For example, The Power Mix is a superfood blend of beets, broccoli, greens, and carrots that forms the base of their Caesar and Cobb Salads. A gluten-free cauliflower crust pizza serves as a hearty base for a house almond pesto, roasted garlic and organic vegetables. Omnivores and pescatarians can choose from wraps, Reubens, burgers, Sirloin Steak Dinner, Fried Chicken and Waffles, an herby salmon, their signature crab cakes with slaw…and more.

Upon entering, sports fans will be pleased to find two big screen TV’s and three 50″ monitors to catch weekend, Monday night and big games while ordering up drinks at the full bar. Craft cocktails, local craft beers on tap, and wine by the glass are offered.

In cool weather, stop in for happy hour on the outside deck, now outfitted with sleek table-top firepit warmers. For office meetings or picnics in the park, customers can order lunch online for curbside pick-up.

Taj Indian Cuisine, located just steps from the downtown Ashland Plaza, is the local mecca for food lovers of tandoori, biryani, samosas, and other dishes common to Indian cuisine. If you’re walking in the vicinity of Water Street and N. Main in Ashland you may even pick up the aromas of ginger, cumin, cardamom, and cinnamon.

Under the guidance of owners Parv and Inder Dosanjh, Taj presents a lunch buffet of authentic traditional and fusion Northern Indian food….made fresh daily. Elements of the buffet change each day. The buffet is offered at Monday night dinner as well and guests can order from the menu nightly.

TAJ cuisine is food with high standards. They value the importance of menu transparency and food quality while preserving the flavors of northern Indian.  The use of organic, non-GMO, natural and local products in the preparation of each dish is the highest priority. Diners can also expect traditional tandoor meats and breads, including the ever popular naan.

Familiar dishes are Chicken Tikka Masala, Aloo Gobi, Lamb Seekh Kabab, Shrimp Vindaloo, and the exquisite Gulab Jamun, deep-fried soft milky dough puffs soaked in rose-scented syrup and topped with almonds. The menu contains an extensive number of dishes that are gluten-free and vegan.

Starting the beginning of December and running until Christmas Eve each year, the main dining room serves the annual Dickens’ Feast, a longstanding traditional 6-course Christmas dinner. In Ashland, Oregon, Deena Branson’s name has been synonymous with chocolate for more than 20 years. She learned her trade on the job at the original Ashland Fudge Company and in 2005 she acquired their original recipes. Branson’s Chocolates was born in 2005 and she continues to create her one-of-a-kind flavors.

Our fine chocolates, fudges, truffles and turtles are made in small batches to ensure freshness. We use all natural and local products, such as teas, spices, and botanicals whenever possible, especially for our flavor of the month infusions, such as Jasmine Tea Squares, Lavender Square, and Earl Grey Tea Squares.

The recipes for our fudge originated in 1887 on Mackinac Island, MI. Staying true to historical methods, we still “table cream” the fudge the traditional way.

We use an all natural chocolate from Peter’s Chocolates, the artisan who created the recipe for milk chocolate.

Plancha chef and owner Tony Efstratiadis has been bringing his modern take on authentic Mexican food to eateries across the country for years and Plancha is his newest offering, Southern Oregons’ 1st and only modern Mexican and tequila venue. Step into Plancha once and the scent and flavor of long cooked meats and spices will call you back.

Diners will appreciate the slow-braised meats and the tortillas made in-house each morning that are the mainstay of Plancha’s menu. The shredded beef and marinated skirt steak, pork and chicken show up in various entree combinations with his housemade slow cooked traditional sauces, fresh avocado crema, shredded cabbage, chiles and more. Chef Efstratiadis keeps an eye on sustainability too, sourcing local farm produce whenever possible, and in a refreshing trendsetting step offers guests stainless steel straws rather than plastic.

The tacos are not to be missed. Simple ingredients full of flavor and wrapped in an uncommon tortilla (it doesn’t fall apart!) is not to be missed. Choices include barbacoa, pescado, carne asada, al pastor (pork), chicken, and vegetable. From refreshing Shrimp Ceviche to housemade chips and salsa, the “1/2 off menu” happy hour accompanied by one of their signature tequila flights is the perfect workday ending. Check the tequila board upon entering for the extensive list of imported options.

If you spy the Planchamobile zipping around town, take note. They deliver anything on the menu to Ashland homes and businesses for parties, meetings or for those nights on Fridays and Saturdays when you just don’t want to cook! ($3 delivery, $15 minimum order; $1 for to-go orders).

Josh Dorcak is co-owner and chef-for-all-seasons at MÄS, Ashland’s only “tasting menu” dining experience. After a year long stint as a popup at Ashland’s Mix Bakeshop, MÄS now has a home of its own, just steps from the Oregon Shakespeare Festival.

One of Oregon’s rising stars, Dorcak earned back-to-back culinary awards: Iron Chef of Oregon (2017); Ashland Culinary Festival Top Chef ( 2016, 2015).

His reputation for applying Japanese techniques to hyper-local and hyper-seasonal ingredients has earned  media raves across the region. Together with co-owner/Chef Luke VanCampen they create thoughtfully composed plates as works of art that are complex and completely experiential. The setting is perfect for a group of friends or date night.

During spring-summer season, hyper-local farmed produce and foraged items determine the menu.  In winter months the focus is on seafoods from the highest quality fishers. Diners will leave the table knowing what it means when a chef asks more from himself as a cook and more from the community of diners to trust him enough to take a seat and experience what he thinks they should be eating.

Choose a 6-course menu in the dining room or a 10-course experience at the 8 seat Chef Counter (5:30pm seating).  The cozy Library Room accommodates 4 to 6 guests at 5:30 and the rest of the dining room opens at 7:45pm for 2 to 4 guests.

For a French food and wine immersion, head to Loft Restaurant and Bar in Ashland, Oregon. Loft Restaurant is a brasserie and bar serving Parisian and Mediterranean-inspired cuisine created by Chef-owner Jeremy Vidalo, who handles both the savory and sweet side of the kitchen. The relaxing restaurant inspires guests to linger with friends over brasserie style food that changes daily, artisan cocktails and local wine flights. Chef Vidalo and his wife/co-owner, Jacqueline Vidalo, utilize all local and regional products sourced from farms, ranchers, foragers and specialty purveyors, with an emphasis on organic, free range, chemical-free and Non-GMO (whenever possible) ingredients.

The restaurant is blessed with several dining areas to suit the mood and time of year. During the warmer months, guests can dine al fresco, sun or shade, on the idyllic terrace, the place for long conversations over wine and appetizers. Theater-goers can stop in for a late-night bite and drinks in their rooftop fire pit lounge that overlooks Ashland Creek. Happy hour in the solarium bar is popular among locals looking for a bright spot for wining and dining. Lastly, the main dining room is an intimate spot for date night or larger parties.

The favorites among locals include the Macaroni Au Gratin, a richly stunning dish with smoked bacon and three cheeses, topped off with truffle oil, bread crumbs. and Dungeness crab on request; Maple Leaf Duck Breast, beautifully presented with cheddar polenta, roasted local vegetables, and orange gastrique sauce; and Lamb Shank Au Vin, sourced from Umpqua Valley and paired with a potato parmesan grain, red wine braising sauce and a citrus gremolata.

Rogues and Rhones play a central role in the wine list, with an emphasis on French varietals, of course. Ms. Vidalo personally curates the wine cellar, giving boutique wineries a place at the table next to established wineries.
