Fermenter Kombucha Brewpub is Portland’s first modernist vegan plant-based restaurant, featuring locally grown produce from the Pacific Northwest bioregion. Besides sugar and some spices, all produce is sourced from less than a hundred miles from the restaurant, such as local organic farms, Oregon Olive Mill, PSU Farmer’s Market, Freddy Guy hazelnuts and others.
Chef/owner Aaron Adams’ plant-based “beneficial bacteria emporium” is open for pickup, delivery and on-site (inside dining and heated outdoor patio seating). Soups, sandwiches, bowls, salads, provisions and ferment products, oregon beer and natural wines are ready to eat or to take out and prepare at home.
