Co-owners Christian Senf and Aura Streett, Wyoming transplants in 2011, took a historic neighborhood cottage and came up with an eclectic open redesign that is all comfort and fun. The new vaulted ceiling, reclaimed bar, and myrtlewood floor lend a spacious pub vibe. As a flagship beer destination in Southern Oregon, the beer, wine, cider, meade, and Kombucha selections stand out, with the majority of their 23 rotating taps drawing from local and regional craft producers. Gil’s is a dedicated growler fill station and bottle shop that serves as the perfect portable answer to game nights at home and camping trips. Beer from smaller breweries, that can sometimes be overlooked, get special attention at Gil’s.
The couple is also owners of Ruby’s, located right next door, which the couple opened to rave reviews around town as a much-needed organic cafe with outdoor seating. Guests at the taphouse are welcome to order from either menu and port food and drink between the two places, wherever seating is found. Gil’s comfort pub food has an international flair that locals and the college crowd flock to.

With a commitment to sustainability, ingredients for their menu are sourced from local organic farms, such as Blue Fox Farm and Pennington Farms in the Applegate Valley, and Antonio’s in Talent.
