Aqua Restaurant and Bar is Ashland’s newest establishment serving farm-to-table American food. Aqua is where locals hangout and travelers make their trip more “foodie” and enjoyable. Owners Parv and Inder Dosanjh refashioned a prior brewpub space into a casual, modern eatery adjacent to their sister restaurant, Taj Indian Cuisine.

Diners with special dietary needs will find plenty to choose from. For example, The Power Mix is a superfood blend of beets, broccoli, greens, and carrots that forms the base of their Caesar and Cobb Salads. A gluten-free cauliflower crust pizza serves as a hearty base for a house almond pesto, roasted garlic and organic vegetables. Omnivores and pescatarians can choose from wraps, Reubens, burgers, Sirloin Steak Dinner, Fried Chicken and Waffles, an herby salmon, their signature crab cakes with slaw…and more.

Upon entering, sports fans will be pleased to find two big screen TV’s and three 50″ monitors to catch weekend, Monday night and big games while ordering up drinks at the full bar. Craft cocktails, local craft beers on tap, and wine by the glass are offered.

In cool weather, stop in for happy hour on the outside deck, now outfitted with sleek table-top firepit warmers. For office meetings or picnics in the park, customers can order lunch online for curbside pick-up.

The underlying vision at Alchemy Restaurant and Bar is one of balance and transformation, in every plate and every drink. It begins with a deep commitment to showcasing the bounty of Southern Oregon and Willamette Valley through fresh, seasonal plates, a curated list of more than 200 craft spirits, and a growing cellar of wines for artful food pairing in the dining room.

Locals favor the Mini Beef Wellingtons (filet mignon, wild mushroom and bacon duxelle drizzled with a port wine reduction), Wild Mushroom Pappardelle (a silky house-made pappardelle pasta with wild mushrooms, Humboldt Fog goat cheese, roasted garlic, basil, and almonds, swirled in a sherry cream sauce) and Seared Duck Breast (with bok choy, black garlic puree, berry gastrique, and beet powder).

In the adjacent light-filled, sophisticated bar, craft cocktails, boutique wines and bistro fare play a leading role, along with the attention-grabbing backlit wall filled with an extensive collection of Scotch, bourbon, rum, tequila, brandy, amaro, and liqueurs. The bar menu will please most palates with options such as Grilled Corn, Veggie Chicharrón, Beer Battered Fries, Sautéed Prawns, and Chicken Wings with Spicy Peach Reduction, among others.

In 2016, Alchemy was honored with the Best of Award of Excellence by Wine Spectator, declaring “you won’t find a restaurant in Southern Oregon with a better wine program”.

Starting the beginning of December and running until Christmas Eve each year, the main dining room serves the annual Dickens’ Feast, a longstanding traditional 6-course Christmas dinner. Popular with locals and visitors from around the world, the event also features holiday music and the much anticipated visit from Ol’ St. Nick. A true family event.

Blackboard Wine Bar, located within Provisions Market Hall, is a small bistro offering oysters on the half shell, cheese and salumi plates along with Provisions pizza, salads and sandwiches, a rotating selection of more than 20 wines by the glass, plus beer and cider on tap. Located just off the I5 Hwy 199 exit, the family-friendly Double Taps Tap Room is owned by Grants Pass resident, veteran and distiller, Kyle Akin. Open since December 2017, Double Taps is Southern Oregon’s outpost for cocktails and mini-tastings of Akin’s Crescendo Spirits, a line of organic “cello’s and premium organic vodka.

There are also 24 taps of regional craft beers, local featured wines to go or stay, growlers to-go, hard ciders, and Crescendo Spirits for retail sale. The bar menu served up by the adjoining Heroes American Cafe is new and traditional American food, including sharable small plates and flat bread pizzas. NY Strip and flat iron steaks, Chicken Parmesan, meat-centric Teriyaki Plates and Spaghetti complete the entree options.

All you oenophiles out there, gather round. The Urban Cork is Medford’s hip wine tasting bar, featuring more than 50 custom wines handcrafted by owner and longtime winemaker, Linda Donovan. Visitors have unparalleled access to almost 90 outstanding varietals that represent the wines of her more than 25 winery clients, and her own label, L. Donovan Wines. Tasters will experience viogniers and tempranillos to more unusual selections like touriga nacional and müller-thurgau. Wines are available for purchase by bottle or case in the tasting room, as well as through The Urban Cork Wine Club.

All wines are produced on site at Pallet Wine Company, her adjacent 21,000 sq. ft. urban winery custom crush facility, and are poured in the tasting room. Tailored to the needs of her small-scale vineyard and winery clients, these are truly local…grown and harvested from Ashland to Roseburg, and they express the terroir of their respective viticulture regions. 

In addition to grapes grown locally in Medford, Ashland, Jacksonville, the Applegate Valley and the surrounding areas, they also process and bottle wines from producers in the Illinois Valley, Central Oregon, the Willamette Valley, and Umpqua Valley.

Tasting and glass offerings are rotated frequently to ensure a unique experience. For wine lovers, The Urban Cork is a convenient starting or finishing point on your adventure of the local and regional wine scene, a gathering place for locals and visitors to unite over a great glass of wine, a venue for local music and events, and a center for wine education.
