My greatest obstacle to writing this story was my inability to keep enough JEM in the cupboard; it’s that incredibly, decadently and elegantly delicious. We discovered that by adding three tablespoons to our favorite Oatmeal Raisin Cookies recipe, reducing the butter by the same amount and decreasing the sugar by as much as twenty-five percent, we created a healthier and tastier cookie. Needless to say, the first batch was quickly devoured.
