One of the joys of small-batch artisans foods like Frog Hollow Farm Peach Chutney is the inspiration they bring to my kitchen, and I get to support regional food crafters at the same time. I love Indian food so I’m always searching for the best chutney to soften the heat of a spicy dish. Since I always seem to have a half-used jar of this perfectly balanced sweet-spicy condiment in the refrigerator from my latest biryani or stew, I discovered it really delivers when added as a key ingredient in a cold salad dressing. Takes just minutes to mix!
1 cup mayo or vegenaise (or try our homemade version here)
2 tablespoons peach chutney, finely chopped
1 tablespoon finely diced shallot
Mix together and use for a summertime turkey, tuna or chicken salad. So Simple!
